My small batch recipe for two takes chicken thighs, pantry staples, and some frozen broccoli to make take out at home for two! I’m not playing favorites when it comes to my dinners for two, but it’s hard not to think of this recipe. It was one of my first $10 dinners for 2 over on instagram, if you’re following my new series over there, and I sincerely apologize for how long it has taken me to post it here on the blog! I’ve made it at least 17 times since that day, and it just keeps getting better. If you’ve ever made my honey garlic chicken or my honey garlic pork, you will recognize the same method for shallow frying.
It’s the best method that uses the least amount of oil and still gives an extra crispy coating, just like the take-out version.I think you guys know I live in Southern California, so my cost of ingredients might be slightly higher, but this recipe clocked in at just under $8 for me.It makes two very generous portions, too! Just for reference, I shop at Costco and buy the big packs of boneless, skinless chicken thighs that average out to $3.50 per pack! Ingredients Chicken.
You can use whatever type of raw chicken you prefer. For me, that’s boneless, skinless chicken thighs, but chicken breast or chicken tenderloins work absolutely fine here, too! You just need 1 pound of raw
