When you hear ‘cinnamon roll cookies,’ you probably imagine the rolled cookies with the perfect swirl in the middle.Those are adorable, please do not get me wrong, but I’m not type A enough for that.I am firmly type B in the way that I will pack all of the flavors of a cinnamon roll into a cookie without all the work.
I also decided last minute that because September means apples, we should add apples to the dough! The best way to do this is to take dried apple rings, and soak them in a small amount of apple juice before stirring them into the dough.The pieces of apple that stick out of the cookie dough will get a bit crispy in the oven, but this is also delicious.This cookies is a true fall amalgamation of flavors and textures.

For the very important cinnamon bits, use 3 tablespoons of brown sugar.Light or dark brown sugar are both fine here.Vanilla.
