Marinated Tomatoes
Marinated Tomatoes Jump to RecipeThese Marinated Tomatoes have a flavorful fresh herb dressing, and this is a perfect way to serve ripe garden tomatoes! I love this recipe that uses parsley and fresh marjoram, but if you don’t have any marjoram, see recommendations for other fresh herbs to use.Marinated Tomatoes is a recipe that originally came from my sister Sandee, and she told me her family loved it as a way to eat fresh summer tomatoes.I’d never heard of marinating tomatoes back then, so I was intrigued to try it.
Sandee’s recipe came from her neighborhood cookbook, and that recipe called for fresh parsley and fresh marjoram as the herbs. In those days I had marjoram in my herb garden, and I loved the salad using that. But now I’m not growing marjoram on my patio, and it can be hard to find.
So recently and I made the marinated tomato salad using red garden tomatoes I got from a friend, yellow cherry tomatoes, fresh parsley, and fresh thyme to replace marjoram. And it was still just as delicious! See notes in the recipe for other fresh herbs you could use.And summer tomato season doesn’t last forever, so if you have garden tomatoes I hope you make this salad right away!
