A good dose of Moroccan seasoning gives the salmon a fragrant, slightly smoky kick.It’s one of those meals that tastes like you’ve spent ages in the kitchen, but really, it’s ready in under 25 minutes.I like to serve this with lemon couscous and a quick tomato salad.

Salmon fillets: You can use fresh or frozen skinless salmon fillets for this recipe, but ensure they are thoroughly defrosted if frozen.I buy skinless fillets as I prefer them. My fillets for the photos were roughly 5oz/140g each, but they were on the small side.I usually get 6oz/170g fillets.
