This is such a fresh Summer time salad with minimal work.

Basically chop up the veggies, add to a bowl, chill in the refrigerator for 30 minutes and you have a refreshing cucumber tomato salad to serve! Ingredients Tomatoes, fresh roma and heirloom tomatoes taste great but you could also use cherry tomatoes (just half them first) in a pinch too.

Cucumbers, peel and slice them.Red onions, you can swap yellow or green onions if you’d like.Garlic, minced.

Cilantro, don’t love it? Use mint or basil instead.  Lime juice, you can also use lemon juice.How to make Cucumber Tomato Salad Cut tomatoes into wedges, peel and slice cucumbers, finely chop a red onion, mince garlic and chop fresh cilantro up.Add ingredients into a large serving bowl.

Season with salt and pepper and mix until lime juice coats all the vegetables.
